Mojito Cocktail

A large handful of fresh mint (10-12 leaves)2 tsp of unrefined brown sugarJuice of 1 large lime1.5 oz Cuban RumSoda Water.

Add the lime juice to the glass and add the sugar. Do not worry about dissolving the sugar as a perfect Mojito retains some undissolved sugar to provide a 'crunch'. Add the mint leaves to the lime and sugar mix and muddle (use a rolling pin to crush the leaves in the glass). Add the rum and give a little stir, then top up with ice and soda water. Garnish with a sprig of mint and lime.
